Whole, uncut peppers can be stored at room temperature for 1-2 days, but refrigeration is highly recommended for optimal freshness and extended shelf life.
Refrigerator
1 to 2 weeks
Store unwashed in a plastic bag or crisper drawer. Do not wash until ready to use to prevent spoilage.
Freezer
8 to 12 months
Wash, core, seed, and slice or dice peppers. Blanching is optional but helps retain color and texture. Pack into airtight freezer bags or containers.
Signs of Spoilage
- Soft spots or mushy texture
- Wrinkled or shriveled skin
- Mold growth (fuzzy white, green, or black spots)
- Discoloration or dark spots
- Off-odor
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including cut peppers, should not be left at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C). Whole, uncut peppers can be left out for a short period, but refrigeration is recommended for quality and extended shelf life.
Safe Handling
Wash yellow peppers thoroughly under running water before cutting or eating.
Prevent cross-contamination by using separate cutting boards and utensils for peppers and raw meats, poultry, or seafood.
If cooking, cook to desired tenderness; there is no specific minimum internal temperature for safety as peppers are often consumed raw.
