Pantry

Store whole, uncut watermelon in a cool, dark place at room temperature. Do not wash until ready to cut.
Refrigerator

Whole, uncut watermelon can be refrigerated to extend shelf life. Cut watermelon should be stored in an airtight container or covered tightly with plastic wrap in the refrigerator.
Freezer
10-12 months
Cut watermelon into cubes or balls, remove seeds, and freeze in a single layer on a baking sheet before transferring to freezer bags or airtight containers. Can also be pureed and frozen.
Signs of Spoilage
- Soft spots or mushy texture
- Sour or fermented odor
- Mold growth (white, black, or green fuzzy spots)
- Slimy appearance on cut surfaces
- Dull or faded color
Room Temperature Safety
40°F–140°F
Perishable foods, including cut watermelon, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour.
Safe Handling
Wash whole watermelon thoroughly under running water before cutting to prevent transferring bacteria from the rind to the flesh.
Use clean utensils and cutting surfaces when preparing watermelon.
Refrigerate cut watermelon promptly within 2 hours (1 hour if above 90°F/32°C).
Avoid cross-contamination by keeping watermelon separate from raw meats and poultry.
