Store whole yuzu in a cool, dry, dark place away from direct sunlight. Quality degrades faster than in the fridge.

Whole yuzu can be frozen. For zest, remove before freezing and store in an airtight container. Juice can be frozen in ice cube trays.

Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
While whole, unpeeled yuzu is less perishable than some other foods, for optimal quality and safety, especially if peeled or cut, adhere to the 2-hour rule. Promptly refrigerate or discard cut yuzu.
Safe Handling
Wash yuzu thoroughly under running water before zesting, juicing, or consuming.
Avoid cross-contamination by using separate cutting boards and utensils for produce and raw meats.
