Pantry

1 week

Store whole yuzu in a cool, dry, dark place away from direct sunlight. Quality degrades faster than in the fridge.

Refrigerator

2-3 weeks

Store whole yuzu in a plastic bag or crisper drawer to maintain moisture and freshness.

Freezer

10-12 months

Whole yuzu can be frozen. For zest, remove before freezing and store in an airtight container. Juice can be frozen in ice cube trays.

Signs of Spoilage

  • Soft spots
  • Mold growth
  • Discoloration (dark spots)
  • Off-odor
  • Shriveled or dried-out skin

Room Temperature Safety

The 2-hour rule applies: Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

While whole, unpeeled yuzu is less perishable than some other foods, for optimal quality and safety, especially if peeled or cut, adhere to the 2-hour rule. Promptly refrigerate or discard cut yuzu.

Expert Tips

Safe Handling

1

Wash yuzu thoroughly under running water before zesting, juicing, or consuming.

2

Avoid cross-contamination by using separate cutting boards and utensils for produce and raw meats.

3

Discard any yuzu that shows signs of spoilage.
