Homemade oil-based sauces with herbs/spices are highly susceptible to botulism and should never be stored at room temperature. Commercially prepared products should be stored according to package directions until opened.
Refrigerator
3-4 days for homemade; 1-2 weeks after opening for commercial
Store in an airtight container. For homemade, consume within 3-4 days. For commercial, refrigerate after opening and use within 1-2 weeks.
Freezer
1-2 months for best quality; not recommended for optimal texture
Freezing may alter texture and flavor due to oil separation. Store in airtight, freezer-safe containers, leaving headspace. Thaw in the refrigerator.
Signs of Spoilage
- Off-odor (rancid oil, sour smell)
- Mold growth
- Discoloration
- Unusual texture or separation beyond normal settling
- Bubbling or gas production (could indicate botulism, discard immediately)
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including oil-based sauces with herbs, should not be left at room temperature within the danger zone for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour. Discard any sauce left out longer than these limits.
Safe Handling
Always refrigerate homemade za'atar oil sauce immediately after preparation.
Do not leave oil-based sauces with herbs/spices at room temperature for more than 2 hours (1 hour if above 90°F/32°C) due to the risk of botulism.
Use clean utensils to prevent cross-contamination.
Ensure all ingredients are fresh and handled hygienically.
